Lambic Inspired Wild Ale w/ Carrot Juice

The Carrot King is a collaboration with our friends at Hop Culture Magazine and their artist Sam Taylor. These gents put on the Juicy Brews festivals around the country, and we’re stoked to have poured at 3 of them so far (Tucson, Oakland, & Richmond). I’d been wanting to expirement with carrots for a while, and it just seemed obvious to make a juice beer for Juicy Brews. There’s also a collaboration glassware which can be purchased HERE.

This is the fist barrel of our “lambic inspired” base that we’ve packaged (though it’s currently in some upcoming blends such as our 2nd anniversary beer & Le Con batch 2). At least for now, I don’t think I’m afraid of using that term in the description as long as I put “inspired” after it. It’s just a fact that it is inspired by that tradition, and that’s the simplest way to portray that without having to use a whole sentence. Anyway, this base does not use a turbid mash or spontaneous fermentation, but it does use local raw heirloom wheat (from Tehachapi Grain Project), a super long 3.5 hour boil, lots of aged hops, and minimum 1 year oak aging. So far we’ve done 5 batches (4 barrels each) and I’m really loving how they’re tasting! We chose it for this beer simply because I thought it tasted best with the juice, and because the carrots we end up using are from the same farm that grew the wheat for the base beer.

This beer uses a pretty idiosyncratic process that I don’t think any other breweries are doing. We get whole local carrots and juice them in house, then use that juice as the bottle conditioning sugar. This is how we keep all that really awesome orange color! But it also means we have to process the fruit and bottle on the same day. The juice does separate and settle to the bottle of the bottle, so it’s really important that you rotate the bottle a few times right before opening it. Don’t shake it or anything like that; I like to gently swirl while holding the bottle upside down, and then rotate a few more times. We are really really stoked on this beer. The flavors are extremely cool. You might not even guess that the flavor is carrot if you didn’t know (and if your eyes were closed). Most people who’ve tried it say it tastes like a herbed or spiced beer, and some even get actually spiciness from it. I don’t know how this will age, so I also strongly recommend drinking it relatively fresh, within 6 months I think is ideal. How it works:

All orders automatically default to hold at the brewery until you coordinate pick up, or choose to ship. (Keep reading!)
Buy and ship one bottle at a time, or we’ll hang on to your purchased bottles and will ship only when you want (as long as your order complies with out hold policies for non-members and members)! Non-members have 90 days from the date of purchase to coordinate pick up or shipping, and members have until March of the following year. If you order hold time expires, your order will be forfeited without refund. It is up to you to track your order’s hold time.
Ready to ship? Simply buy a shipping box for $10.00 at checkout, and we’ll ship your orders (past and new) all at once.
Shipments are dropped once a week every Tuesday for the week prior. Shipments are made overnight, and will be delivered the Wednesday after they are shipping.
You can build a box to make shipping most cost effective for you! Just simply purchase a shipping box (or however many you need!) when you are ready to ship all the orders being held at the brewery. Each box holds up to 12 items, so be sure to purchase the correct amount of boxes you need in order to ship all of your orders. Orders will not be split.
PLEASE NOTE: ALL MAGNUM BOTTLES PURCHASED MUST HAVE A SINGLE BOX PURCHASED PER MAGNUM BOTTLE. IF YOU HAVE 2 MAGNUMS YOU WANT SHIPPED, PURCHASE 2 SHIPPING BOXES. IF YOU HAVE 1 MAGNUM BOTTLE YOU WANT SHIPPED, PURCHASE 1 SHIPPING BOX. Magnums cost more to ship, and the boxes that are used to ship them are more costly. Additionally, Magnums will not ship with any other orders. Please purchase a shipping box outside of the one(s) required for you magnum purchases in order to ship any other order(s).
 In order to pick up your order at the brewery, please email Info@celladorales.com to coordinate pick up. A week notice is appreciated, but not required.
