Our Winter release in an eight-part collaboration with Far Field. Each season, we blend together one barrel from each brewery and split the blend back in half. One brewery adjuncts their half, the other releases the base blend. The roles trade off through the year. For Winter, Far Field adjuncts with citrus and rosemary. We’re releasing the base blend.
Far Field’s contribution to this season is their open fermentation saison. Ours is Little Red Beer, a low-ABV tart red ale with a heavy dose of aged hops, aged about three years in barrels . The same base became Desire Path.
The blend went into neutral oak wine barrels and was naturally conditioned with orange blossom honey.
Far Field’s citrus-and-rosemary version is available at their taproom in Hawthorne.
Tasting notes
Tart apple and dried red fruits on the nose, with black plum and currant underneath. The aroma turns toward leather, tobacco, and cedar, like opening the door of a humidor. Vanilla from the oak turns to baking spice on the finish. The acidity is mellow, lifting the aromatics without interfering and the bitterness gives the beer real structure.
