Dry Hopped Wild Ale w/ Rakau & El Dorado

Shivaya is a wild ale that uniquely juxtaposes the spectrum of what hops can offer; combining earthy and funky aged hops, with fresh tropical and fruity high alpha acid hops. What are aged hops you ask? Well they’re made by taking low alpha acid whole cone hops and storing them for months to years in warm temperatures and open to the air. This converts the acids into stinky cheesy and barnyard flavors and aroma that are the cornerstone of Belgian Lambic beer.

And the result of brewing and barreling a beer made with the these aged hops, and dry hopping it with fresh Rakau El Dorado right before packaging, is a beverage with a lot of complexity!!

We perceive a whirlwind of aromas that constantly evolve as the beer warms and opens up. Lots of over-ripe nectarine and banana, with dried mango, pine sap, rose, and rosemary. With very earthy notes of dust, tree bark, and wet hay, plus tiny hints of skunk and cheese rind that really elevate this beer into something very special. The mouthfeel is very full with a subtle bitter pine resin viscosity and a medium acidity. I taste citrusy Meyer lemon and bitter orange peel, with green apple skin, and more funky hay and woodiness. All together a balanced and interesting beer that we’re all very excited to share with you. Cheers!
