This marks the beginning of Shades of Seasons—an ambitious, year-long mixed-fermentation project between us and our friends at Far Field Beer Co. Over the next year, we are releasing eight distinct beers across four seasons to explore how terroir, time, and intention shape a shared liquid.
For this first release, we created a single base blend: a Golden Sour Ale aged in Pumpkin Whiskey barrels at Far Field, blended with our Oud Bruin. We split that liquid down the middle. Far Field bottled the unadorned base to showcase the raw blend, while we took our half and infused it with a trio of fall-inspired ingredients.
This is Shades of Fall (The Cellador Edition).
This isn’t your standard “pumpkin spice” profile; it opens with a brooding, elegant darkness, offering immediate notes of baking spice, Amburana wood, and a distinct, subtle smoke from the Black Cardamom. On the palate, the Bourbon Vanilla adds a rich, creamy texture that plays against the molasses and black plum character of the Oud Bruin base. The finish brings a tannic, earthy structure from the Black Walnut Leaves, while the lemon zest note from the base beer pulls back to offer a bright, zippy lift at the very end, keeping the heavy flavors from becoming cloying.
The Series: This is Parts 1 & 2 of 8. To experience the full study, we highly recommend visiting Far Field Beer Co. to pick up their unadorned version of this blend. Tasting them side-by-side offers a rare look at how intentional additions can completely transform a base beer.
Serving Suggestion: Serve at 50-55°F. This beer loves oxygen—let it open up in the glass to find the vanilla and smoke notes. Perfect with roasted root vegetables, duck, or a cheese board featuring aged Gouda.
