Wild Ale with 50 lbs per Oak Barrel of Brazilian Peppertree Honey & Late Harvest Masumoto Spring Bright Nectarines

Naturally Conditioned with Bergamot Oleo Saccharum

Secret Harvests is named for the new book of the same name by David “Mas” Masumoto, and happens to be the first collaboration we’ve done with Chris Quiroga aka Woodshop Beer Co since moving down to our new location in Torrance. The base beer was actually brewed on our very first brew day after the move, back on January 19, 2023.

We started with two great-tasting barrels of our aged hop saison aka “Snakes & Ladders.” That base uses Lambic-style aged hops, which lend that funky/cheesy character as well as El Dorado hops, which provide pineapple and other tropical fruit notes. The barrels were dosed three different times with Brazilian peppertree honey and allowed to ferment dry each time. Next, we racked the beer onto hand cut and hand crushed late-harvest Spring Bright nectarines from Masumoto Family Farm. After 6 months on the fruit, the beer was bottled and naturally conditioned; not with our normal addition of orange blossom honey, but with an oleo-saccharum made from the rinds of bergamot grown by JJ’s Lone Daughter Ranch. It has been resting in the bottle for almost 10 months.

The beer drinks exceptionally dry and somehow still manages to hide its high abv. Give it a little room and time to breathe in your glass and you’ll be rewarded with notes of bright floral citrus, preserved peaches and intense honey. Delve deeper and you’ll find farmhouse rusticity that’s more mineral than it is spicy.

Each bottle features a label with an image inspired by the cover artwork of Mas’ new book and carved into a stamp by my wife, Emma. Chris and I inked and stamped each label by hand so you’ll notice some variation in the print.
