Every winter, there is one specific bottle I make sure to pick up: Avec Les Bons Voeux from Brasserie Dupont.

I don’t just buy one. I try to grab a few bottles every year so I can tuck them away. My friends and I have a tradition of doing a vertical tasting on New Year’s Eve—opening vintages from years past to see how time has transformed them. If you haven’t had it, do yourself a favor and grab a bottle this season. It translates roughly to “With Good Wishes.” It has all the charm of the classic Saison Dupont but is brewed at a higher gravity for the holidays. It leans a little sweeter, warmer, and richer—the perfect bottle to pop when you’re deciding between a beer and a hot toddy.

For our 9th Anniversary, I wanted to create a beer that served that same purpose for us.

I built the base recipe for the first of our Ninth Anniversary releases around that profile—higher strength, higher comfort, and built to age. But instead of a straight saison yeast, we fermented it with our house mixed cultures. This introduces a layer of wild complexity you won’t find in the original. While it spent six months in oak barrels, the defining character comes from its conditioning: this beer has been aging in the bottle for nearly a year prior to release.

Like its inspiration, this beer is designed to evolve. I recommend picking up a few bottles—one to enjoy fresh this holiday season, and others to lay down for a tasting next New Year’s Eve.

The label reads: “With good wishes from Cellador Ales on the occasion of our 9th Anniversary.” And we mean it. Thank you for the last nine years.

Fun Fact: We released this label in two different colorways. If you order multiple bottles, you may receive a mix of both designs.

Tasting Notes:

• Aroma: Opens with distinct honey and noble hops. Despite the wild cultures, the nose retains a classic Belgian beer aromatic quality.
• Palate: This is a texture-forward beer. The carbonation is creamy with a head that persists, carrying flavors that remind us of a Chardonnay but with some tropical notes—fruity, mineral, and slightly oaky.
• Finish: The acidity sits comfortably between mild and medium, balancing the slightly warming alcohol. It finishes with a subtle musty, mineral quality that speaks to its time in the cellar.

Serving Suggestion: Perfect for the coldest nights of the year. Serve in a stemmed glass at cellar temperature (50-55°F) to allow the honey and white wine notes to open up.
