Still Red Wild Ale Aged in a Sherry Puncheon with Black Raspberries

This is our red base (same as Palimpsest, Stamp Piles, etc.) aged for 4 months in a 500L red wine puncheon, then aged for 6 months in a fresh 500L Sherry Puncheon with 200 pounds of whole black raspberries.  This beer was tasting amazing and was extremely viscous; it had legs on a glass like wine! When we bottled it we shot for a really low level of carbonation, but after weeks in the bottle, it did not carbonate at all. BUT we eventually decided we liked it even more without the carbonation. It really played into the red wine notes and appearance of the beer. So, after sheepishly sharing it with a few close friends, and including it as one of the pairings in our second Vagabond Cheese event, and after getting really great feedback on it, we decided to fully embrace it’s flat/still nature. We recommend chilling for at least 24 hours, but then pulling it out of the fridge 1-2 hours before opening and enjoying. It is definitely best enjoyed at red wine temperatures of 55-65 degrees. If you’re feeling crazy, you could even try decanting it to open up more of the oxidative flavors from the sherry.

This is the most unique beer we’ve made, and maybe one of the most unique beers I’ve ever tried. It is a deep deep purple/black from the fruit, tannic from the 2 barrels it rested in, and full of fruit and sherry flavors and aromas. We hope you enjoy it as much as we do! The name is an anagram, but the label is a not a palimpsest this time. À votre santé!

Also, fun fact, if you were able to try Black Raspberry Atavism on tap around Southern California that was the second use of the fruit from this beer, aged in the same Sherry Barrel.

  • If the “Local Pickup” option is chosen at checkout, arrangements must be made to pick up. Due to possible fluctuations of pick up locations, you must email Syndicate@celladorales.com to coordinate pick up. A week notice is appreciated, but not required
  • Shipments are dropped once a week every Tuesday
